- Preheat oven to 200°C/180°fan/gas mark 6.
- Place ProZero, warm water, dried yeast and psyllium husk powder into a mixing bowl and stir until combined.
- Leave to rest for 10 minutes.
- Meanwhile, place the carrots on a baking tray and sprinkle with the herbs and 1 tbsp oil.
- Bake in the oven for 40 minutes or until soft.
- Add Fate Low Protein All-Purpose Mix into the mixing bowl, tomato puree, 1 tsp olive oil, salt and mixed dried herbs and combine by hand until a dough forms. Knead for 2 minutes.
- Dust your hands with Fate Low Protein All-Purpose Mix roll out the dough to a thickness of 1cm.
- Slice into long thin strips of approximately 2cm wide.
- Remove the carrots from the oven and allow to cool slightly.
- Twist one strip around each carrot and place on a baking tray lined with greaseproof paper.
- Bake in the oven for a further 30 minutes or until golden brown.
- Meanwhile, cut triangle shapes out of the peppers.
- When baked, remove the carrots from the oven and allow to cool slightly on a wire rack.
- Once cooled, place the carrots on the skewers and add the pepper triangle on top to resemble a rocket.
