Fiery Ginger Sweet Potato Salad

Step 1

Boil the sweet potato for 6 minutes, add baby corn and cook for another 3-4 minutes.

Once cooked, drain and run under cold water.

In a bowl, mix the sweet potato and corn with remaining ingredients until combined.

  • 50g Sweet potato, peeled and chopped into large chunks
  • 2 Baby corn, sliced
  • 25g Red onion, peeled and diced
  • 35g Mixed peppers, diced
  • 40g Mayonnaise
  • 1 tbsp Maple syrup
  • 2g Ginger, grated
  • Salt and pepper to taste
