Place oil in a medium sized, heavy-based frying pan. Sautè onion; 5min, until just softened. Add chilli powder, paprika, and salt, stir to cover onion in spices.
Add red and yellow capsicum; sauté further 10min, until vegetables just browned and slightly softened. Set aside, prepare tortillas.
Place Fate Mix, salt, baking powder, oil, and water into a medium-sized bowl. Stir until mixture is well blended. Rest 2min.
Dust a clean work surface with extra Fate Mix. Divide mixture into 4 even-sized portions and place each on top of the dusted surface.
Heat to medium, a small non-stick pan, greased with oil spray.
Form one portion into a ball, using a rolling pin, flatten into a circle measuring approx. 12cm wide, 4mm thick. Using a spatula, lift dough from the bench and flip into pan. Cook 40secs., bubbles will just start to form on uncooked side, flip, cook further 40secs.
Repeat steps 2 and 3 until 4 tortillas are made.
Serve with vegetables.
Serving suggestion:
Try increasing the chilli if you like your food with a lot of heat, or omit it completely if you prefer a tamer option.
Top Tips:
-The vegetables can be cooked on a BBQ grill if you prefer, oil is not required, and cooking times may vary.
-Vegetables such as mushroom, eggplant, green capsicum, cauliflower, and brown onion, also work well in this recipe.
