Eye Pops

  • RECIPE MAKES: 6 eye pops
  • COOK TIME: 1hr 25mins
Step 1

Preheat oven to 180°C/fan 160°C/gas mark 5.

Step 2

Cream together the sugar and butter in a bowl.

Step 3

Add the Fate Low Protein All-Purpose Mix and the baking powder and rub together with your hands until it resembles breadcrumbs.

Step 4

In a separate bowl, mix together the ProZero, egg replacer and vanilla essence.

Step 5

Add the ProZero mixture to the breadcrumbs and mix until well combined.

Step 6

Spoon the mixture into a 10cm baking tin and bake in the oven on the middle tray for 25 minutes.

Step 7

Remove from the oven and allow to cool.

Step 8

Once cooled, crumble the sponge into a bowl and mix with the icing until combined.

Step 9

Divide the mixture and shape into 6 equally sized balls.

Step 10

Decorate with the fondant icing and the icing pens to resemble eye balls.

Step 11

Stick the straws in the bottom of the eye balls and serve.

  • For sponge:
  • 50g Sugar
  • 50g Butter
  • 100g Fate Low Protein All-Purpose Mix
  • 1 tsp Baking powder
  • 75ml ProZero
  • 1 tsp Egg replacer
  • 1 tsp Vanilla essence
  • 200g Betty Crocker Vanilla Buttercream Style Icing
  • For decorations:
  • 250g Dr Oetker Soft Fondant Icing Ready To Roll White
  • Permitted icing pens, blue, green, black and red
