Dim Sum

  • RECIPE MAKES: 8 Dim Sum
  • PREP TIME: 30 min
  • COOK TIME: 15 min

For this recipe you will need a saucepan & a general or bamboo steamer.

step 1

To make the dough add the Fate Low Protein All-Purpose Mix, water, oil and vinegar to a bowl.

Mix until combined then transfer to a clean, lightly dusted surface (using Fate mix) and knead well until the dough is smooth.

Weigh the dough and divide into 8 even pieces.

step 4

Using a rolling pin, roll each piece into a flat even circle (approx 10cm diameter circle).

Half fill a saucepan of water, cover with steamer and bring to boil.

Whilst the water is coming to the boil make the dim sum filling. Heat a frying pan over a medium heat and add sesame oil.

step 7

Add the shallots, capsicum, mushrooms, garlic, thai basil and thai 7 spice to the pan and stir for 3-4 minutes or until vegetables soften.

Take one of the dough circles into the palm of your hand and place approx. 1 Tbsp of filling in the centre.

Fold the dough over into a semi-circle and gently press the edges with your finger tips to seal.

Repeat the process to fill all dough circles and use up all filling.

Carefully place each dim sum into the steamer, using tongs and steam for 15 minutes or until they appear translucent.

Using a pair of tongs remove from the steamer, allow to cool slightly and serve.

  • 100g Fate low protein all-purpose mix (plus extra for dusting)
  • 50ml Warm water
  • 2 tsp Vegetable oil
  • ½ tsp Rice wine vinegar
  • FOR THE FILLING
  • 11/2 Tbsp Sesame oil
  • 4 Spring onions/shallots (finely chopped)
  • 1 Red capsicum (finely diced)
  • 4 small Mushrooms, approx. 60g (finely diced)
  • 4 Garlic cloves (finely chopped)
  • 10g Fresh thai basil (finely chopped)
  • 2 tsp Thai 7 spice
