Date Slice

Pre-heat oven to 180°C. Line 2, 19cm x 19cm baking tins with paper. Dust a clean workbench with a little extra Fate mix. Place dates into a small bowl, cover with boiling water; 20min.
Meanwhile, place Fate Mix, baking powder, cinnamon, and sugar into a large mixing bowl.
In a separate small bowl, whisk together egg replacer and water, until smooth.
Add egg replacer and water to dry ingredients, along with the essence, apple, and butter.
Stir well with a large metal spoon, 2-3min; until well combined.
Remove dates from water, pat dry with paper towel, chop roughly. Stir well into dough.
Place dough onto dusted workbench, using palm of hands, knead 1-2min., until a smooth ball is formed. Cut into halves. Knead again, 1min., until 2 smaller balls are formed.
Using fingertips dusted with a little extra FATE mix, press each ball into a 19cm x 19cm square in a prepared tray.
Bake 15-20min., until just browned on top. Remove from oven. Stand in tray 5 min., cut each large slice into 8 slices. Serve warm or cool on a wire rack.
Top Tip:
Try dusting with icing sugar for a dessert, sweeter option.

- 2 ½ cups Fate Low Protein all-purpose mix (+ extra for dusting)
- 1 tsp Gluten Free Baking Powder
- 1 tsp ground cinnamon
- 1 cup brown sugar
- 1 tsp egg replacer
- 1 Tbsp water
- 1 tsp vanilla essence
- 1 green apple, peeled grated
- 4 Tbsp (80g) melted butter
