Curry with Green Vegetables

  • RECIPE MAKES: 4 serves

  • COOK TIME: 20-25min
Step 1

Add oil and onion into pot and fry until transparent.

 

Step 2

Add garlic, curry leaves and cook for 1min.

Step 3

Add Garam masala, turmeric and cumin and stiry for a further 1min.

Step 4

Add all green vegetables and sauté for 5min.

Step 5

Add Prozero and coconut essence and stir all ingredients together.

Step 6

Let simmer for 20-25min or until vegetables are soft.

 

Step 7

Season with salt and serve.

Top tip:

Serve with some low protein rice(protein of rice not counted in total protein of recipe).

  • 2 Tbsp oil
  • 1 onion; finely chopped
  • 1 Garlic clove, peeled and finely chopped
  • 2-3 Curry leaves
  • 1 tbsp Garam masala
  • ½ tsp Turmeric powder
  • ½ tsp Cumin powder
  • 2 handfuls green beans; quartered,ends chopped
  • 150g broccoli; cut into florets
  • 2 large zucchinis; sliced
  • 2 1/2 cups Prozero
  • 1 tsp coconut essence
  • Salt to season
