Curry with Green Vegetables

Method
Step 1
Add oil and onion into pot and fry until transparent.
Step 2
Add garlic, curry leaves and cook for 1min.
Step 3
Add Garam masala, turmeric and cumin and stiry for a further 1min.
Step 4
Add all green vegetables and sauté for 5min.
Step 5
Add Prozero and coconut essence and stir all ingredients together.
Step 6
Let simmer for 20-25min or until vegetables are soft.
Step 7
Season with salt and serve.
Top tip:
Serve with some low protein rice(protein of rice not counted in total protein of recipe).

- 2 Tbsp oil
- 1 onion; finely chopped
- 1 Garlic clove, peeled and finely chopped
- 2-3 Curry leaves
- 1 tbsp Garam masala
- ½ tsp Turmeric powder
- ½ tsp Cumin powder
- 2 handfuls green beans; quartered,ends chopped
- 150g broccoli; cut into florets
- 2 large zucchinis; sliced
- 2 1/2 cups Prozero
- 1 tsp coconut essence
- Salt to season
