Creamy apple and beetroot salad

  • RECIPE MAKES: Serves 4
  • COOK TIME: 15min total time
Step 1

Place half the lemon juice in a large bowl. Halve and core apples. Thinly slice. Add apple to lemon juice (see top tip). Gently toss to coat.

Step 2

Combine mayonnaise and remaining lemon juice in a bowl. Season with salt and pepper. Thinly slice celery stalks. Chop leaves.

 

Step 3

Add celery, celery leaves and beetroot to apple mixture. Gently toss to combine.

Top tip:

Tossing sliced apple in lemon juice prevents the apple turning brown.

*Although not traditionally counted; beetroot is providing the 1g protein per serve 

  • 2 tablespoons lemon juice
  • 2 medium red delicious apples
  • 2 tablespoons whole-egg mayonnaise (S&W Whole Egg Mayonnaise)
  • 3 celery stalks, leaves reserved
  • 1/2 medium beetroot, grated *
