Pre-heat the oven to 200˚C/180˚C fan/gas mark 6.
Place Violife creamy original, brown sugar and ground cinnamon in a large bowl, beat for 1-2 minutes until smooth and combined.
Add baking powder and Fate low protein all-purpose mix to the Violife mixture.
In a separate bowl, mix egg replacer and ProZero. Add this to the Violife mixture, beat until a soft smooth batter is formed.
Fold grated courgette into the mixture.
Divide mixture into 4 muffin cases.
Bake in oven for 15 to 20 minutes until golden brown.
Allow to cool and enjoy.
Sprinkle lightly with icing sugar once cooled.
