Courgette and Leek Soup

  • RECIPE MAKES: 1 portion
  • COOK TIME: 20 minutes
Step 1

Place a pan over a low heat, add oil, courgettes and leek then cook for 5 minutes until soft.

Step 2

Add the garlic to the pan and cook for a further minute.

Step 3

Add vegetable stock and ProZero, bringing to the boil and simmer for 2 minutes.

Step 4

Add the basil, salt and pepper.

Step 5

Using an electric hand-held blender, blend until smooth.

Serving Suggestion:
For extra crunch, top with Mini Crackers.

  • 1 tsp Olive oil
  • 2 Courgettes, diced
  • 30g Leek, sliced
  • 1 Garlic clove, crushed
  • 200ml Vegetable stock
  • 50ml ProZero™
  • Handful of fresh basil, chopped
  • Salt and pepper to taste (optional)
