Place the red onion, lime, garlic and oil to a frying pan over a medium heat and fry for 1 minute.
Add the curry powder, turmeric, garam masala and mustard seeds and fry for a further 3 minutes.
Stir in the tomato purée and the ProZero and simmer on a low heat for 15 minutes.
Pass the mixture through a sieve and collect the sauce in a bowl.
Add to the jackfruit to the bowl and stir to combine.
Finally, add the mango chutney, mayonnaise, Koko dairy free yoghurt alternative and sugar to the mixture and finally mix well.
Serving Suggestion:
Serve on a low protein bread roll or as a filling for a jacket sweet potato.
Top Tip:
Mix low protein rice through the coronation jackfruit to make a rice salad.
