Cinnamon Muffins

  • RECIPE MAKES: 12 muffins
  • PREP TIME: 15 min
  • COOK TIME: 25 min
Step 1

Preheat oven to 180C/160C fan force. Line a 12 muffin pan with patty pan liners. 

Step 2

Place the butter, sugar, milk, egg, vanilla, cinnamon, FATE mix and custard powder in a large bowl. Use electric beaters on low speed to beat until combined. Gradually increase the speed to high and cream mixture for 5 min, until pale, creamy and smooth.  

Step 3

Spoon mixture evenly into the patty pan liners and bake in oven for 20-25 min. When cakes are firm to touch remove from oven and cool in tin for 5 min.  

Step 4

Remove muffins to a wire rack. Melt extra butter and brush the top of each muffin with the melted butter whilst muffins are still warm.  

Step 5

Combine extra sugar and cinnamon and sprinkle over the top of each buttered muffin.  

Step 6

Serve the muffins while still warm and enjoy.

  • 175g butter at room temp, plus extra 40g melted 
  • 1 ½ cups caster sugar, plus extra 2 tsp
  • ¾ cup rice milk 
  • Egg replacer ie: equivalent to 3 eggs
  • 2 tsp vanilla extract
  • ½ tsp ground cinnamon, plus extra 1 tsp 
  • 270g (1 3/4cup) FATE Low Protein All Purpose Mix
  • ¼ cup custard powder
