Chocolate Gelato

This dark chocolate gelato is one for those who truly love chocolate. You’ll only need a spoonful to get your chocolate fix.  Perfect after a meal when you just need something sweet…..Delicious!

step 1

In a medium-sized saucepan, whisk 1 ¼ cups milk alternative, with cream, sugar, cornflour, and cocoa powder. Set over medium heat, bring to boil, whilst whisking constantly. When it boils, lower heat to minimum, simmer 5-6min., until thick and creamy. 

step 2

Remove from heat, add chocolate, stir until chocolate completely melted. Whisk in remaining milk alternative. Cool to room temperature, refrigerate 2hr, or preferably, overnight. 

 

step 3

Strain chocolate custard through a fine mesh strainer (this makes the gelato super smooth!). Pour into the bowl of an ice-cream maker. Churn, stop the machine when gelato is icy but soft.  Transfer to an airtight container, and freeze until firm, approx., 2hr. 

step 4

Remove from freezer a few minutes before required. Enjoy.

TOP TIP

 

This gelato is best enjoyed within 2 weeks of freezing.  After that, ice crystals start forming, and texture is no longer as smooth.
