'Cheesy' Aubergine Bake

  • RECIPE MAKES: 2 portions
  • COOK TIME: 50 minutes
Step 1

Preheat the oven to 190°C/ fan 180°C/gas Mark 5.

Step 2

Mix together the chopped tomatoes, garlic and basil in a bowl.

Step 3

In the casserole dish, layer the aubergine slices with the chopped tomato mixture and top with the Violife.

Step 4

Bake for 35 minutes or until crispy on the top.

Serving Suggestion:
Serve with vegetables.
