Burrito

  • RECIPE MAKES: 4 burritos
  • COOK TIME: 65 minutes
  1. To make tortillas add Fate low protein all-purpose mix and baking powder to a bowl.
  2. In a separate bowl, mix remaining ingredients together and allow to stand for 5 minutes until thickened.
  3. Add wet ingredients to the Fate low protein all-purpose mix then knead into a dough.
  4. Divide dough into four equal amounts and roll into 9 inch circles.
  5. Heat a dry frying pan to medium and cook each tortilla for 30-60 seconds until slightly brown on each side.
  6. Set the tortillas aside to cool.
  7. To make the filling add 1 tbsp of vegetable oil to the frying pan and fry off the onions, peppers, mushrooms, leek, tomatoes, coriander, garlic, and chilli on a medium heat until soft.
  8. To assemble the burrito, place the tortilla on a plate and add 30g vegetable filling, 30g cooked low protein rice, 10g salsa, 10g lettuce and 10g grated Violife original flavour. Fold the sides of the burrito down and roll upwards tightly from the bottom so that the filling is secure.
  9. If you like, toast the burrito on a hot griddle pan or panini maker for 1 minute.
