Bruschetta

This bruschetta recipe is super simple and fast to prepare, perfect when you need to eat, and don’t have time to wait! The balsamic vinegar takes the flavour to another level. Bon appetit!

step 1

In a large bowl, combine onion, tomato, garlic, and basil.  Take care to avoid mashing tomato.

Add vingear, oil, and salt and pepper, to taste. Mix again.  Cover, chill, 1hr, to allow flavours to develop.

Toast bread (using a grill will allow you toast each slice of bread at the same time). Spoon tomato mixture evenly across toast. Sprinkle crumbled feta across bruschetta, if desired.


 

STORAGE

 

Tomato mixture stays fresh in an airtight container in the refrigerator for up to 24 hours.

 


 

TOP TIPS

 

If you are short on time, skip the hour of chill time for the tomato mixture, the bruschetta will still taste great.  

 


 

  • ½ small red onion, peeled, finely diced
  • 6 medium tomatoes (500g), coarsely chopped, drained of juices
  • 2 cloves garlic, crushed
  • 8 fresh basil leaves, finely chopped
  • 1 ½ Tbsp balsamic vinegar
  • 3 Tbsp extra virgin olive oil
  • Salt and pepper, to taste

  • 60g Low Protein feta cheese (i.e., Bio Cheese Dairy free feta), crumbled, optional
