Braised Red Cabbage

Step 1

Place the butter and sugar into a saucepan over a medium heat and stir until the butter has melted and the sugar has dissolved.

Step 2

Add the cabbage and sweat for 5 minutes.

Step 3

Pour in the stock, cider vinegar and cinnamon, stir and cook 10 minutes.

Step 4

Add the apples and cook for a further 15 minutes stirring continuously, until the stock has reduced.

  • 40g Brown sugar
  • ½ Red cabbage, finely sliced
  • 200g Vegetable stock
  • 3 tbsp Cider vinegar
  • ½ tsp Cinnamon
  • 2 Apples, peeled, cored and diced
