The BIG Breakfast

Method
Step 1
Heat oil in a small, non-stick frying pan over medium-high heat. Add onions, fry until glistening with oil and slightly browned.
Step 2
Toast bread until cooked to desired. Meanwhile, add spinach to mushrooms; fry until spinach has wilted.
Step 3
Serve toast topped with butter, mushrooms, and spinach. Season with salt and pepper.
Top Tip:
Try frying tomato halves, with the mushroom and spinach for an even bigger low protein breakfast!
Ingredients
- 1 tsp olive oil
- 6 brown mushrooms, sliced
- 1 cup baby spinach leaves
- Salt and Pepper, to taste
- 2 slices Fate Low protein bread
- 2 tsp butter or margarine
