Beetroot and Date Energy Balls

Step 1

Add oil to pan, peel, chop beetroot and sauted till soft.  

Step 2

Add beetroot, oats, cocoa and dates into food processor and blitz untill all ingredients are blended.  

Step 3

Spoon out ingredients from food processor to a mixing bowl and stir through vanilla extract, lemon zest, honey and low protein flour until all ingredients are well combined.  

Step 4

Weigh, total weight of mixture (should be approx. 330grams) and divide by 8 which will result in 8 x 40g portions. 

Step 5

Take each 40g portion and roll it into a ball using your hands. 

Step 6

Once you have rolled 8 balls, on a clean workspace pour the desiccated coconut and lightly coat each ball.  


 

PROTIEN

 

1.5g of protein per ball (8 ball recipe 40g ball) or 0.8g of protein per ball (16 ball recipe 20g ball).

 


 

SERVING

 

Can weigh out each ball into 20g serve’s which equate to 16 serves and only 0.8g of protein per serve. 

 


 

  • 1 tsp Oil 
  • 45g Rolled oats
  • 1 Tbsp (9g) Cadbury cocoa 
  • ¾ cup (125g) Roughly chopped dates 
  • ½ cup Beetroot, peeled and cooked 
  • 1 tsp  Vanilla extract 
  • ½ tsp Lemon zest 
  • 2 dessert spoons of low protein flour 
  • 2 Tbsp Honey 
  • ½ cup (45g) desiccated coconut
