BBQ Sweet Potato Salad

  • COOK TIME: 20 minutes
Step 1

Boil the sweet potato for 6 minutes, then add Baby corn cooking for a further 3-4 minutes.

Step 2

Once cooked, drain and run under cold water.

Step 3

Once cooled, combine with remaining ingredients in a mixing bowl and serve.

  • 50g Sweet potato, peeled and chopped into large chunks
  • 2 Baby corn, sliced
  • 25g Red onion, diced
  • 35g Mixed peppers, diced
  • 40g Mayonnaise
  • 1 tbsp BBQ sauce
  • 1 tsp Chives, chopped finely
  • Salt and pepper to taste
