Banana Muffins

Step 1

Pre-heat the oven to 200˚C/180˚C fan/gas mark 6.

Step 2

Place the banana and brown sugar in a large bowl, beat for 1-2 minutes until creamed together. 

Step 3

Add baking powder and Fate low protein all-purpose mix to the mixture.

Step 4

In a separate bowladdand mix cold water, ProZero and vanilla essence. Add to mixture, beat until a soft smooth batter is formed. 

Step 5

Divide mixture into 4 muffin cases.

Step 6

Bake in oven for 15 to 20 minutes until golden brown.

 

Step 7

Allow to cool and enjoy.

  • 2 Tbsp brown sugar 
  • ½ tsp gluten free baking powder
  • 1 cup (160g) fate low protein all-purpose baking mix 
  • 3 tbsp cold water 
  • 3 Tbsp ProZero  
  • 1 large (200g) ripe banana (flesh weight 130g) 
  • 3 drops vanilla essence
