Baked Zucchini and Squash

Method
Step 1
Pre-heat oven to 180°C.
Step 2
Trim ends of squash and zucchini. Cut into slices, 5mm thick. Place vegetables in a medium sized baking dish and toss in olive oil.
Step 3
Grate bread to make crumbs, combine these with cheese, and sprinkle evenly over vegetables.
Step 4
Cover with foil and bake, 30mins. Uncover, bake further 5mins, until golden.
Top Tip:
For a different flavour, try using low protein feta or pizza cheese, they also taste delicious.
To prepare crumbs, stale bread works best. If unavailable, try drying out fresh bread for a couple of hours before grating.

- 8 yellow squash
- 2 large zucchinis
- 2 Tbsp olive oil
- 2 slices low protein bread*
- ½ cup BIO parmesan cheese
- Salt and pepper, to taste, optional
