Method
Step 1
Pre-heat the oven to 190°C/fan 180°C/gas mark 5.
Step 2
Cover the whole aubergine in 1 vegetable oil and bake on a baking tray for 25 minutes.
Step 3
Remove from the oven and allow to cool.
Step 4
Remove the skin and place the aubergine flesh in a bowl.
Step 5
Using a hand-held electric blender, blend together the aubergine, garlic, coriander and olive oil until smooth.
