Aubergine Stacks

  • RECIPE MAKES: 2 Stacks
  • COOK TIME: 10 minutes / Cooking time: 15 minutes
  1. Preheat the oven to 200°C/fan 180°C/gas mark 6.
  2. Using the cookie cutter, cut a circle out of the block of Violife, and slice into six 1cm thick slices.
  3. Stack the slices of aubergine, onion, tomato, and Violife - brush each layer with oil when stacking.
  4. Repeat to form a second stack.
  5. Place the two stacks on a lined baking tray and bake in the oven for 15 minutes or until soft.
