Aubergine Stacks

  • RECIPE MAKES: 2 Stacks
  • PREP TIME: 10 minutes
  • COOK TIME: 15 minutes
Step 1

Preheat the oven to 200°C/fan 180°C/gas mark 6.

Step 2

Using the cookie cutter, cut a circle out of the block of Violife, and slice into six 1cm thick slices.

Step 3

Stack the slices of aubergine, onion, tomato, and Violife - brush each layer with oil when stacking.

Step 4

Repeat to form a second stack.

Step 5

Place the two stacks on a lined baking tray and bake in the oven for 15 minutes or until soft.

  • 150g Violife original flavour block 
  • 1 Aubergine, sliced into 1cm thick slices 
  • 1 Red onion, sliced into 1cm thick slices 
  • 2 Beef tomatoes, sliced into 1cm thick slices 
  • 2 tbsp Olive oil
