Apple Pie

This pie is sure to be a crowd pleaser. The dough is simple to make, and when baked becomes a delicious tasting pastry, whilst the apple filling provides a dose of sweet, comfort food. Enjoy with a cup of tea, or be more decadent and serve with a little rich cream…insanely good.   

 

Equipment 

 

You will need a 21cm pie dish, baking paper, and approximately 2 cups of dried beans for pre-baking the crust.

Pre-heat oven to 190°C.

Using fingers, rub FATE mix, margarine, and sugar together in a large bowl until it resembles coarse breadcrumbs. Add water to mixture, using a large metal spoon, mix to form a dough.

Leave to rest, 10min. Meanwhile, prepare filling.

Heat apple, sugar, and margarine in a large saucepan over a medium heat. Cook 15min., until apple is soft. Set aside until assembling the pie.

Dust a clean workspace with with extra FATE mix, knead rested dough 1min., until smooth.

Divide dough into two pieces, form each into a ball using hands. Roll each ball between two pieces baking paper to ~24cm diameter circles.

Lift one dough circle into baking dish, press dough gently around the edge using your thumb. Slice any excess dough from edges, and using a fork, prick base.

Place baking paper over dough base, add dried beans, spread them evenly across paper. Bake in pre-heated oven 10min. Remove from oven.

Place softened apple on top of the base. Top with second dough circle, crimp around edges.

Make two small slashes in the lid to allow steam to escape. Combine extra sugar and orange juice, and then brush lightly over pastry case to glaze.

Bake 20-25 min., until golden brown. Leave to rest 5min., serve warm.

TOP TIP

 

Try serving with a dollop of cream or vanilla ice-cream if your protein allowance permits.

 

Left over apple pie stays fresh in an airtight container for 2-3 days in the refrigerator.  Either re-heat in the microwave, or eat cold, delicious!

 

Add a dash of cinnamon and nutmeg to the apple filling if you desire.

  • 2 ½ Tbsp caster sugar
  • 100ml water
  • FILLING
  • 8 (1.6kg) granny smith apples; peeled, chopped into eighths
  • 1 ½ Tbsp firmly packed brown sugar (+ 1 Tbsp extra for glazing)
  • 1 Tbsp dairy free margarine
  • 1 Tbsp orange juice
