Apple cake

Pre-heat oven to 180°C. Grease and line with baking paper, a 20cm round cake tin.
In a small jug, combine egg replacer mixed with water, milk alternative, and golden syrup.
Place butter, sugar, mixed spice, and cinnamon into a medium sized mixing bowl. Using electric beaters, mix well together, 5-8min; until pale and creamy. Beat in the vanilla.
Using a metal spoon, fold Fate Mix and baking powder into the creamed butter mixture. Stir in apple. Pour egg replacer, milk alternative, and syrup mixture gently over this mixture. Stir 1-2min; until a batter is formed.
Pour batter into prepared tin, bake 35-40min; until golden on top.
Remove from oven, leave in tin 30min; to cool. Turn out onto a large serving plate.
Dust cooled cake with icing sugar, serve.
- 2 tsp egg replacer (Orgran No EggTM) mixed with 4 Tbsp water
- 100ml low protein milk alternative
- 2 Tbsp golden syrup
- 100g butter
- ½ cup caster sugar
- ½ tsp each mixed spice, cinnamon
- 1 tsp vanilla essence
- 200g Fate Low Protein All-Purpose Mix
- 2 tsp Baking Powder
- 3 pink lady apples, peeled, cut into 2cm pieces
- Icing sugar, for dusting
