Preheat the oven to 200°C/fan 180°C fan/gas mark 6.
Place the tomatoes, garlic and onion onto an oven tray and place in the oven for 15 minutes or until the tomatoes soften.
Transfer to a pan over a medium heat and add the vegetable stock and basil.
Simmer for 10 minutes and blend.
Season to taste.
