Cheesie Tomato Pasta

Method
Step 1
Cook pasta as per packet instructions, then drain.
Step 2
Add oil to saucepan and heat.
Step 3
Add onions, celery, butternut squash, sweet potato and garlic and cook for 5 minutes.
Step 4
Add tomato purée and oregano and cook for a further 2 minutes.
Step 5
Add tinned chopped tomatoes and water and bring to the boil. Simmer for 10 minutes.
Step 6
Once cooked, mix in with cooked pasta and Violife.
Step 7
Mash with a fork until almost smooth.

- 30g Low protein anellini, cooked
- 2 tsp Oil
- 20g Red onions, finely chopped
- 20g Celery, finely chopped
- 50g Butternut squash, peeled, de-seeded & grated
- 50g Sweet potato, peeled & grated
- 2g Clove of garlic, crushed
- 2g Tomato purée
- ½ tsp Oregano, dried
- 100g Tinned chopped tomatoes
- 100ml Water
- 20g Violife Creamy Original
