Preheat oven to 200°C/fan 180°C/gas mark 6.
Steam sweet potato until you can pierce with a fork but still too tough to eat (approx. 15 minutes).
Add sweet potatoes into a bowl and mash with a fork to create a chunky texture. Then add 100g grated Violife and fold together.
Once cool, use your hands to roll mixture into 24 small balls, and lightly coat each ball in grated Violife and oregano.
Place bites on a baking tray (lined with baking parchment) and cook in oven for 12-15 minutes, turning them at least once so they cook evenly.
Remove from oven and serve.
